Heavy-Duty Automated Rye & Whole Wheat Bread Makeup Line




This high-capacity automated bread makeup line is engineered specifically for handling challenging rye and whole wheat dough with zero-stress processing technology. The entire production flow ensures maximum gluten structure preservation and high-efficiency output for commercial bakeries.



1. Pre-Sheeting & Continuous Dough Band Formation 

The process begins at the highly automated conveyor system. Large divided dough blocks are gently transferred through two consecutive industrial dough sheeters (industrial rollers). Instead of destructive single-stage reduction, this multi-step sheeting gradually reduces the dough to an ideal, uniform thickness. Individual sheared dough sheets are then seamlessly joined end-to-end on the conveyor to form one continuous dough band, ensuring non-stop downstream processing.

2. Dual-Line Dough Band Laminating & Layering 

To compensate for the low-gluten nature of rye and whole grain flour, this production line features an advanced dual-infeed compounding system. Two independent continuous dough bands from twin front-end lines converge at the laminating station. Two synchronous oscillating lappers (swing-arm folders) cross-fold and overlap the incoming dough bands. This stress-free laminating process effectively rebuilds a multi-directional gluten network, giving the healthy grain dough the perfect elasticity and structural layering required for a premium crumb texture.

3. Final Sheeting, Slitting & Rolling 

The compounded, two-layer dough band then passes through two heavy-duty multi-roller sheeting satellites (main sheeters) to reach its final target thickness without tearing. On the dedicated forming table, stationary slitting knives (longitudinal cutters) precisely divide the wide dough band into parallel strips. Immediately after, high-speed moulding rollers (mesh rollers) roll the flat dough strips into tight, uniform cylindrical dough logs, followed by an aligning/guiding device that gathers the rolled strips closely into perfectly positioned rows.

4. Servo Cutting, Panning & Discharge 

The aligned dough rows advance to the high-precision servo guillotine cutter, where they are cleanly snipped into standard-length toast dough pieces (bread portions). Finally, an automated panning depositor/retracting conveyor accurately drops the cut dough pieces directly into the toast moulds waiting on the denester/panning elevator. The loaded baking pans are then smoothly discharged to the back-end proofing and baking systems.
