This automatic high-hydration bread production line integrates four core machines — a 4P servo dough divider, a dough rounder, an intermediate proofer and a one-out-two forming machine — into one continuous 23,000 mm workflow. It is engineered specifically for soft, sticky, high-hydration dough: servo-driven cutting keeps portion weight consistent, gentle rotary rounding protects the dough structure, and temperature-and-humidity-controlled proofing delivers uniform volume and internal structure from the first piece to the last.
The 4P servo divider is built on a Japanese servo motor, PLC and inverter, a precision linear guide and imported bearings, with a high-accuracy metering oil pump. With 2 outlets it handles 200-560 g pieces; with 8 outlets it handles 20-110 g pieces. Output ranges from 600 to 12,000 pieces per hour depending on outlet quantity and portion weight (calculated at a specific gravity of 1.20 g/cm3).
| Equipment | Function | Power | Dimension (mm) | Key Components |
|---|---|---|---|---|
| 4P Servo Divider | Divide dough into equal-weight pieces | 6.65 kW | 3100 x 1500 x 1800 | Japanese servo and PLC, precision linear guide, imported bearings, high-accuracy metering oil pump; 2,500 kg |
| Dough Rounder | Gentle rotary rounding | 4.5 kW | 1250 x 1750 x 2250 | Imported three-phase motor, Japanese inverter, precision bearings; 1,500 kg |
| Intermediate Proofer | Temperature & humidity controlled resting | 3 kW | 5500 x 1780 x 2600 | German PLC, imported three-phase motor, Japanese chain |
| Forming Machine (One-out-Two) | Synchronized rolling and elongating | 2 kW | 2700 x 1200 x 1500 | German PLC, imported three-phase motor, Japanese chain |
Servo divider output by outlet quantity (specific gravity 1.20 g/cm3): 2 outlets 200-560 g / 600-3,000 pcs/h; 3 outlets 80-350 g / 900-4,500 pcs/h; 4 outlets 35-270 g / 1,200-6,000 pcs/h; 5 outlets 30-220 g / 1,500-7,500 pcs/h; 6 outlets 25-150 g / 1,800-9,000 pcs/h; 8 outlets 20-110 g / 2,400-12,000 pcs/h.
1. What portion weights and outputs can the servo divider handle?
From 20 g to 560 g depending on outlet quantity: 2 outlets divide 200-560 g pieces at 600-3,000 pcs/h, 4 outlets divide 35-270 g at 1,200-6,000 pcs/h, and 8 outlets divide 20-110 g at 2,400-12,000 pcs/h (at 1.20 g/cm3 specific gravity).
2. Why is this line suitable for high-hydration dough?
The divider cuts with servo-driven precision instead of mechanical pressure, and the metering oil pump plus gentle rotary rounding handle soft, sticky dough without tearing or degassing, keeping portion weight stable.
3. What is the total footprint of the line?
The main line runs 23,000 mm in length. With the optional pre-ferment proofer (9,000 x 6,500 mm, 16 trolleys) and 8-in-8-out final proofer (about 35 minutes proofing, 1,500 loaves or about 4,800 pieces per batch), the full layout is planned to match your plant drawing.
4. What electrical and control standards are used?
All machines run on 380 V three-phase power. The divider uses a Japanese servo motor, PLC and inverter; the proofer and forming machine use a German PLC with imported three-phase motors and Japanese chains; linear guides and bearings are imported precision components.
5. Is installation and training included?
Factory acceptance test, wooden-case packaging and spare parts are included. Installation, commissioning and operator training are provided on site (2 persons, 15 days), shipped FOB any port of China.
