Product Description

Product Overview

This bread production line supports the sponge-and-dough (two-stage) process: an optional pre-ferment proofer room of 9,000 x 6,500 mm holds up to 16 fermentation trolleys, and the 4P servo divider, dough rounder, intermediate proofer and one-out-two forming machine process the final dough on the 23,000 mm main line. The combination gives bakeries flavor development from pre-fermentation together with the portion accuracy of servo dividing.

The 4P servo divider is built on a Japanese servo motor, PLC and inverter, a precision linear guide and imported bearings, with a high-accuracy metering oil pump. With 2 outlets it handles 200-560 g pieces; with 8 outlets it handles 20-110 g pieces. Output ranges from 600 to 12,000 pieces per hour depending on outlet quantity and portion weight (calculated at a specific gravity of 1.20 g/cm3). The whole line runs on 380 V three-phase power and occupies a footprint of 23,000 mm in length.

Applications

  • Bakeries producing sponge-and-dough bread with developed flavor
  • Plants adding a pre-fermentation stage to an existing dividing line
  • Producers of toast and buns using sponge dough for softer crumb
  • Factories needing trolley-based bulk fermentation before dividing
  • Projects planning fermentation rooms alongside the processing line

Technical Specifications

Equipment Function Power Dimension (mm) Key Components
4P Servo Divider Divide dough into equal-weight pieces 6.65 kW 3100 x 1500 x 1800 Japanese servo and PLC, precision linear guide, imported bearings, high-accuracy metering oil pump; 2,500 kg
Dough Rounder Gentle rotary rounding 4.5 kW 1250 x 1750 x 2250 Imported three-phase motor, Japanese inverter, precision bearing; 1,500 kg
Intermediate Proofer Temperature and humidity controlled resting 3 kW 5500 x 1780 x 2600 German PLC, imported motor and chain
Forming Machine (One-out-Two) Synchronized rolling and elongating 2 kW 2700 x 1200 x 1500 German PLC, imported motor and chain

Advantages

  • Pre-ferment proofer room (9,000 x 6,500 mm, 16 trolleys) integrates with the main line
  • Sponge dough mixer option completes the two-stage process
  • Servo dividing (20-560 g, 600-12,000 pcs/h) keeps the final dough portion-accurate
  • One supplier layout covers fermentation room and processing line

FAQ

1. What portion weights can the line handle?
From 20 g to 560 g. With 2 outlets the divider produces 200-560 g pieces; with 8 outlets it produces 20-110 g pieces. Weight is controlled by the servo-driven cutting system with a precision metering oil pump.

2. How is the pre-ferment stage integrated?
The optional pre-ferment proofer is a 9,000 x 6,500 mm room holding 16 trolleys; sponge dough ferments on trolleys and is then mixed (optional sponge dough mixer) and fed to the main line divider.

3. What is the hourly output?
600 to 12,000 pieces per hour depending on outlet quantity and portion weight, calculated at a specific gravity of 1.20 g/cm3. An 8-outlet setting at small piece weights reaches the top of the range.

4. What electrical and control standards are used?
All machines run on 380 V three-phase power. The divider uses a Japanese servo motor, PLC and inverter; the proofer and forming machine use a German PLC with imported motors and chains; linear guides are Japanese and bearings are Swiss-made.

5. What capacity does the pre-ferment room add?
The 16-trolley room buffers bulk sponge dough between mixing and the main line, matching the divider's 600-12,000 pcs/hour range to the fermentation schedule.
